Miniature Crustless Spinach Quiches

Yield: 3 1/2 dozen quiches
8 eggs
1/4 cup cream
1 10-oz package spinach (thawed, drained and squeezed dry)
2 cloves garlic, minced
1/4 tsp nutmeg
1/2 tsp salt
1 cup of crumbled feta cheese

Directions:
Preheat oven to 425. Mix together eggs, cream, garlic, nutmeg and salt. Add spinach. Grease mini muffin tins. Add about a teaspoon of feta cheese to each cup, and fill with egg/spinach mixture about 2/3 of the way to the top.

Bake for 25-30 minutes or until set. You may want to finish under the broiler for a bit to brown the tops a little.

Tomatillo Guacamole

This is a guacamole with a punch. The roasted tomatillos blended with hot chilies add acidity and spice to the creamy avocados. It has the luxuriousness of guacamole at just over half the calories.

1/2 pound fresh tomatillos, husked
1 jalapeño or 2 to 3 serrano chilies, seeded if desired and roughly chopped
10 cilantro sprigs, plus additional leaves for garnish
Salt to taste
2 small or 1 1/2 large ripe avocados
1 tablespoon freshly squeezed lime juice

1. Preheat the broiler. Cover a baking sheet with foil and place the tomatillos on top, stem side down. Place under the broiler at the highest rack setting and broil two to five minutes, until charred on one side. Turn over and broil on the other side for two to five minutes, until charred on the other side. Remove from the heat and transfer to a blender, tipping in any juice that has accumulated on the baking sheet. Add the chilies, cilantro sprigs and salt to the blender and blend to a coarse purée.

2. Cut the avocados in half and twist the two halves apart. Scoop out the flesh into a bowl or the bowl of a mortar and pestle. Mash with a fork or pestle. Do not use a food processor or a blender, as you want to retain some texture. Stir in the lime juice, the tomatillo mixture and salt to taste and combine well. Transfer to a bowl and serve with baked or microwaved tortilla chips or crudités, or use for tacos or avocado sandwiches.

Yield: 1 1/2 cups, serving six.

Advance preparation: This will hold for a couple of hours in the refrigerator but is best eaten soon after preparing.

Artichoke Chevre Dip

2 cans artichoke hearts, drained and roughly chopped
1 8 oz. package of fresh chevre cheese
zest of 1 lemon
2 tablespoon grated pecorino romano
1 tablespoon grainy mustard
1 tablespoon capers, rinsed
1/2 teaspoon fresh pepper
1 tablespoon minced fresh parsley

In the bowl of your food processor, combine the artichokes, chevre, lemon zest, pecorino, mustard, capers, pepper and parsley, and pulse 4 or 5 times. You want the mixture to be smooth, but with texture. Check the salt and acid levels, and add some salt or a squeeze or two of lemon juice if necessary.This dip will keep a day or so wrapped tight and refrigerated. Garnish with a few leaves of fresh parsley and some capers and serve with toasted pita triangles or baguette slices.

Berry-Glazed Cheese Torte


Alice’s Blackberry Glazed Cheese Torte
40 appetizer servings

4 cups white cheddar, finely grated
½ cup red onion, chopped
4 Tbs. Mayo
½ Tbs gelatin
6-7 oz. berry preserves



Fold cheese, onion, mayo together. Spread in 6” springform pan sprayed with Pam
Dissolve gelatin into 2Tbs warm water. Add the preserves. Let cool to room temp.
Spread cooled glaze over cheese. Refrigerate overnight.
Garnish with red raspberries and mint leaves. Serve at room temp with slices of baguette.

Cute food!


Cupcakes topped with Marshmallow Snowmen.  Candy scarves and hats.  Wouldn't use toothpicks again; find an edible alternative.  Also, find hats that are lighter -- snowmen were top-heavy.


Penguins made with jumbo olives (small olives for head), Boursin Herb cheese spread piped inside, and carrots for feet and nose.  Hold together with pick.
